3 Ways to Get Squashed!

Butternut Bisque

Carrie from It’s Frugal Being Green featured this recipe earlier last month.  I made a couple slight changes.

Ingredients

  • 3 tbsp butter
  • 1 medium onion, coarsely chopped
  • 2 garlic cloves
  • 1/2 tsp dried thyme
  • 1/4 tsp ground cinnamon
  • 1/8 to 1/4 tsp cayenne pepper
  • salt
  • 1 large butternut squash, peeled, seeded, and cut into 1-inch cubes (mine was around 10″ long)
  • 14 ounces chicken broth
  • 1 cup milk
  • 1 tablespoon lemon juice
  • sour cream
  1. In a large saucepan, heat butter over medium heat. Add onion, garlic, thyme, cinnamon, and cayenne. Season with salt, and cook, stirring occasionally, until onion is softened, 5 to 7 minutes.

  3. Add squash, broth, milk, and 3 cups water. Bring to a boil; reduce to a simmer, and cook until squash is tender, about 20 minutes.

If you have a blender, you can work in batches pureeing until smooth.  If you decided you’re finally hungry for dinner at midnight and lazy like me, dump everything into a pitcher and let your stick blender do all the hard work.  Stir in lemon juice and season with salt. Serve bisque with sour cream and garnish with cayenne if desired.

On the note of sour cream… my new favorite is from Kalona Organics.  It is the creamiest, most flavorful sour cream I have ever tasted. D doesn’t get the whole organic thing, but this sour cream might have just made him a fan :-)

Anyway, Kalona, Iowa is about one hour northeast from us and the area has the largest settlement of Amish and Mennonites west of the Mississippi – how’s that for trivia!  (Kalona is also just 10 miles from Riverside,  the future birthplace of Captain James T. I almost forgot to tell you what I thought!  The bisque is thick and creamy and wonderfully delicious.  I was delightfully surprised.  D even took a bite and said it tasted “ok”, which from him is saying a lot.

  10. I do this whenever I made squash soup, or bake it or whatever! Such a yummy snack. Except I only use a little salt and no butter/oil. Maybe I’ll go make squash!
