Raw Butternut Squash Cookies
(Wait! Before you say, “Ew, no thanks,” check out The Small Footprint Family’s beautiful photo of them.)
- 4 cups peeled butternut squash, chopped into medium sized chunks
- 1 cup raisins
- Juice of 1 orange
- 3 Tbsp. raw honey, date paste or maple syrup
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- dash of cardamom (optional)
- 1/2 cup pumpkin seeds, soaked for 6 hours (optional) I suppose you could use squash seeds too, but I used raw sunflower seeds.
- In a food processor, blend the chopped butternut squash and transfer to a bowl.

- In a food processor, blend raisins and orange juice. Transfer to the butternut squash mixture.

- Add the sweetener, cinnamon, nutmeg, cardamom (optional) and seeds (optional) to the butternut squash mixture.
- Mix everything thoroughly.

- Place wax paper or a Teflex silicone sheet on your food dehydrator tray.
- Using a scoop or spoon, place balls of the cookie mixture onto the tray until it’s gone.
- Flatten each cookie to about 1/2 inch thick. (I smooshed mine to much. I think they were 1/4″)

- Set the dehydrator to 105 degrees, and leave for 10-12 hours. (Mine’s just a plug and go model and it worked fine.)
- Enjoy with an ice cold glass of almond, hemp or raw cow’s milk!
My problems with this were that I made the cookies too thin and then forgot to get them in the morning when they were supposed to be done. The result: something along the lines of raw butternut squash fruit roll-up.
The first bite was weird. It just doesn’t make sense for squash to be a cookie! The second bite was a little better. By the end of the first cookie, I thought I should try another one just for good measure. Yes, they are good, but they’re different at first because we’re not used to something like that.

We discovered last fall that we love butternut squash. I found an excellent recipe for a pizza, of all things! My husband has been asking for it now that they’re in season again. Here’s the link to the recipe (I used a homemade crust, of course).

I do this whenever I made squash soup, or bake it or whatever! Such a yummy snack. Except I only use a little salt and no butter/oil. Maybe I’ll go make squash!

Yes, in hindsight, it could have been done with just salt. I think the butter was a little unnecessary.
