When your husband is out finishing a project like this…
and this (yep, that’s a new header in progress)… and asks for a hearty soup for dinner, full of his favorites, I make him this…
Baked Potato Soup
Ingredients
- 4 large Baking Potatoes
- 2/3 cup Butter
- 12 slices Bacon, cooked and crumbled
- 2/3 cup Flour
- 1-1/4 cup grated Cheddar Cheese
- 6 cups Milk
- 8 ounces Sour Cream
Instructions
- Bake potatoes. Cool. Scoop out pulp and set aside. Discard/compost skins.
- Melt butter over low heat and add flour.
- Add milk, heat and stir until thick.
- Add potato pulp, salt, pepper, 2 tablespoons of green onion, 1/2 cup of crumbled bacon and 1 cup cheese.
- Cook until thoroughly heated; stir in sour cream and heat through.
- Serve with remaining green onions, bacon and 1/4 cup cheese as garnish.
This recipe was slightly altered from the original at the Potato Soup Recipe website. There are quite a few variations of potato soup there! If you really need some veggies in your soup, you can add the 4 scallions back in. Our grocery store was selling a 15 pound bag of potatoes for $3, so I took advantage of the deal. Another variation I made since I had so many potatoes was that I added more to the recipe. I left some of the potato as chunks instead of making it completely smooth (that just doesn’t seem right for potato soup) and it tasted wonderful. D thought so too – we had quite a bit left over which he took to work the rest of the week. No, I’m not like that! I offered other things to take for lunch but he wanted the soup.

Yes, that is a firepit. Built DIY style over the last 2 months. As fall rolls in, I am sure it will be nice an toasty on the crisp fall nights. Look for a post in the future detailing the building process. It’s not difficult to build, just a little time consuming, but it’s worth it for the $ saved doing it yourself.

The arbor is looking great! When I was a little girl, my dad always made potato soup for me when I was sick. This looks like a good recipe–I dislike to eat it in restaurants because so often they use smoked cheese. Wish I had some of this “comfort food” right now!

Thanks for visiting! D’s a huge fan of bacon and cheese. The wedding he was in last weekend had a ton of leftover food, including cheese and crackers. He snagged a whole tray (whoa!) so this recipe came in handy for getting rid of some of it. We also made some macaroni and cheese. Agh – unhealthy week!

My husband loves fried potatoes with ketchup for breakfast.
We eat a lot of potatoes here; we had potato soup yesterday, actually! We have baked potatoes, mashed potatoes, pot roast with potatoes, corned beef hash, etc.

about “Turn key” dinner or something like that. It involved cooking a “bag” (not sure what size) of potatoes and then having them for several days. What I usually do is have baked potatoes one night. Using the leftover baked potatoes, have potato soup the next night. Saving the skins, have a form of potato skins the next day or night. Usually involving some form of barbecue sauce and meat and cheese (I love barbecue!). Sometimes I’ll make fried potatoes (or home fries). Then I’m usually sick of potatoes for a while!

Potatoes!!! Man’s favorite food!
We like to use the skins for yummy potatoe skins.
I call them twiced baked potatoes.
I fill them with cheese, bacon, onion….whatever my family thinks will be yummy.
We enjoy these with just about any meal.
